Birthdays, anniversaries, and all those milestones deserve to be celebrated with something amazing, delicious, and good for your body. These pancakes fit the bill every time! With a simple recipe that gives you great results every time, it’s a crowd pleaser for everyone in your house!

This recipe is easy to double, triple, or quadruple to feed all your favorite people on those special occasions. You can even freeze these and have them as a quick breakfast treat the next time you’re running low on time.

Skip the cake and make these pancakes instead!

Finding the time to cook and bake for your family and friends can be difficult. We’ve all got a lot going on, and creating space in your schedule to whip up fresh pancakes every morning might be harder than it sounds.

Cut down on the time you need and save yourself some hassle with these tricks and tips!

Freezer Trays

Bananas are notoriously difficult to keep fresh and ready to use when sitting out on your counter. Sticking the whole thing in the freezer works great but can leave you with an indeterminate amount of banana for a recipe. Instead of just putting the bunch that’s gotten overripe in the freezer, mash the banana and put it into pre-measured packages or trays! You’ll be able to pull them out when you need them, thaw them quickly, and use them without wondering how much of the banana you’re actually supposed to use.

Cut Once

Prepping fruits and veggies for the week takes up more time than any of us would care to admit. Rather than spending that precious time in the morning, afternoon, evening or wherever, take time out of your prep day and cut up all the fresh fruits and vegetables you’ll need for the week! It makes it easier to grab them out of the fridge and use them without wasting time!

Make Extra!

Depending on your recipe, you can likely double or triple the recipe and have leftovers that can be your meal prep for the week! Rather than spending your precious free time on a Saturday or Sunday prepping a meal all on its own, build your meal preps into the week's meal plan. Instead of just making 10 pancakes for everyone to share one morning, take a few extra minutes and make 20 and freeze half. You’ll be able to pull those out later on and reheat them quickly for a snack or easy breakfast!

Birthday Cake Pancakes Recipe

These are a great source of protein and keep your calorie count low! Pair them with some yogurt or other types of protein or fiber and you’ve got a breakfast of champions!


1 scoop vanilla protein powder 1 egg ½ banana, mashed ½ tsp pure vanilla extract 1 pinch sea salt ½ cup chopped strawberries 1 Tablespoon hemp hearts ½ Tablespoon coconut oil

Start by heating up a small or medium sized skillet on your stovetop and melt the coconut oil while you mix up the rest of the ingredients.

In a bowl, mix together protein powder egg, banana, vanilla, and salt with a fork. Bring together just until mixed. Fold in the strawberries and hemp hearts.

When the skillet is hot, add ¼ cup of batter at a time to the oiled pan. Cook on one side until bubbles have risen to the top. Flip carefully, then cook the other side until golden brown.

Serves 1.


Coconut oil is the best to use for this recipe as it has a slightly sweeter taste to it but you can replace it with other types of oils like olive oil or avocado oil.


Pancakes can be stored in the fridge for up to a week and in the freezer for several months! Making extra can be a great way to keep some good food on hand for snacks or an easy breakfast. Warm up pancakes quickly in a warm pan or by popping them in the toaster for a few moments.


Breakfast is the most important meal of the day and on a special occasion it can be tempting to skip breakfast entirely since it always comes across as pretty standard fare. Kicking your recipe game up a notch is a great way to still celebrate the day without having to stick to oatmeal to get all your nutritional needs for the day!
